I have cooked in clay for a number of years and I never get tired of using this cookware for some of my favorite dishes. As long as I’ve had some of the pieces I’m surprised I haven’t broken them by dropping them since I tend to break glasses and other dishes pretty often. But my clay is still going strong. I wanted to buy some as a holiday gift for my brother since he loves to cook too, but he tends to like more modern styles in his kitchen. Since my son has allergies to quite a few foods including eggs, I end up making a lot of our desserts and breads from scratch at home. It’s just simpler that way, not having to worry about what ingredients might be hidden in store-bought items. The tricky part to baking without eggs is getting the cake to stay together and not crumble to pieces when you try to remove it from the baking pan. Of course it matters what kind of pans you use as well. A cheap pan will make it more difficult to get decent results as well. This Banana Carrot Salad has all the makings of a kid-approved dish. What’s not to love? It’s got bananas, carrots, and yogurt, all with a dash of sugar just to sweeten it up a bit. When you take your first bite, you’ll know why kids love it. It’s crunchy and smooth all at the same time. I love that I’m putting fruits, vegetables, and dairy on the same plate…and that they’re eating it all up! Be sure to use regular carrots, not the so called “baby carrots”. For a long as I can remember, my mother-in-law has been the designated lasagna cook for family gatherings. Even though all of her children are grown, she still enjoys making it for special dinners or simply just because. I think she just really loves to watch her children and her grandchildren enjoy her food, so she never minds making up this family favorite. And she also makes a killer sweet potato casserole at Thanksgiving!
